Why is vanadium pentoxide used as a catalyst?

Because vanadium changes oxidation state readily. That ability to release and recover oxygen allows it to take part in the reaction and regenerate afterwards, which is precisely the behaviour required of an oxidation catalyst.

It acts as a colourant. Vanadium compounds are used in the formulation of pigments and glazes, and in combination with other elements they give rise to colour families widely used in the sector, with good stability at firing temperatures.
